Many thanks to Ginny Jones, a follower of the blog who lives on Martha's Vineyard (picture above) on the east coast of the USA, who has sent in a recipe for muffins, an ideal accompaniment to something like a casserole, a soup such as carrot cumin or pea, or a salad.
2 C of plain flour (I use King Arthur unbleached)
3 to 3 1/2 tsp baking powder
1 tsp salt
1 cup (or more) shredded cheddar cheese (not grated -- you want bigger shreds) -- I used an easily available Irish cheddar but Scots cheddar would be perfect
4 tbsp butter
1 egg beaten
1/2 C milk -- I used about 1 C of yogurt from the boys farm.
Mix dry ingredients and mix in the cheese and butter
Mix the milk/yogurt into the egg and tip into the bowl of dry ingredients.
Mix quickly.
Makes about 12 med sized muffins (use a muffin pan with little paper cups) or could be scones or drop biscuits.
Bake at 425 degrees F or so. Watch carefully because they could easily burn.
